Who is Charlie?
Charlie is the name we’ve affectionately given our sourdough starter. This bubbly little guy is the foundation of our sourdough, artisan breads, cinnamon buns and seasonal sourdoughs.
But, what is a sourdough starter? It’s simple! Charlie is a mixture of flour and water that has been naturally fermented over time. It captures wild yeast and beneficial bacteria from the environment, allowing it to develop a unique flavour profile and texture.
At Freson Bros., our Mother Dough has been nurtured for over nine years, becoming a living testament to our passion for baking. It has also earned a home in the World Sourdough Library in Belgium, labelled #131, which is very exciting.

The Craft of the Baker: Sourdough
Every loaf of our sourdough bread begins with our beloved Charlie. The magic begins when our skilled bakers combine Charlie with three simple ingredients: 100% Alberta flour, water and salt. That’s it!
The dough is lovingly mixed and shaped, then allowed to rise, developing a complex set of flavours and a chewy, crusty exterior that has become a hallmark of our sourdough bread.
